What Actually Makes Toffee Good

Toffee looks simple: butter, sugar, and time. But the details make all the difference.

  • The snap. Properly cooked toffee should snap cleanly, not bend or stick to your teeth. That comes down to hitting the exact right temperature. Cook it too long and it turns hard and bitter. Not long enough and it stays soft and greasy.
  • The butter. Real toffee is a butter candy first. Cut corners here with margarine or oil blends and you lose the rich, almost nutty flavor that defines it.
  • The chocolate coating. A thin, even layer of real chocolate, not a waxy chocolate flavored coating, should complement the toffee without overwhelming it.
  • Freshness. Toffee that's sat in a warehouse for weeks loses its snap and its shine. Small batch, made to order toffee tastes noticeably different from mass produced.

Our Toffee, Made the Slow Way

At CST Sweets, every batch of toffee is still hand poured, hot, in small batches. It's the same process, and the same family recipe, we've been using since 2003. We cook it in copper, pour it by hand, and coat it in real chocolate, then finish it with toppings that actually mean something: crushed pretzels, roasted almonds, espresso, cinnamon sugar.

  • Snickerdoodle Toffee. Our most popular flavor, and the one regulars specifically drive back for. Cinnamon sugar over a classic buttery toffee base.
  • Dark Espresso Toffee. Dark chocolate and real espresso, for people who want their sweet with a little bite.
  • Milk Salted Toffee. A classic milk chocolate toffee finished with flaked sea salt.
  • Twisted Pretzel Toffee. Buttery toffee studded with crushed pretzel for crunch and a salty edge.
  • Dark Salted Toffee. Dark chocolate, sea salt, and nothing to hide behind.

Watch It Happen

Unlike most toffee you'll find on a shelf, ours doesn't have to be a mystery. Our retail shop and Experience Kitchen in historic downtown Bonner Springs lets you watch toffee get poured hot and see it snap fresh off the slab in real time. It's been described as "dessert theater," and it's one of the only places in the Kansas City metro where you can actually watch toffee being made instead of just buying it off a shelf.
